Hard to believe that the summer is gone…..I still think that Fall came a few weeks early this year.  The trees were dropping their leaves at the end of August and the air had that Fall feeling.  The feeling that makes you feel all warm, cozy, and feeling like it’s time for Starbucks to bring out their Pumpkin Spice Lattes.

 

As Fall approaches it gets harder and harder to find nice fruit for breakfast.  I love serving fresh melon and berries or making fresh smoothies, but Fall brings with it the fruits used for those cobbler, crisps, and tarts that bring back memories of grandma’s house.  Ahhhhh…comfort food!  Who can pass up warm apple or peach cobbler with freshly whipped cream??

 

With that in mind, I have a favorite recipe to share.  A Warm Apple Topping perfect for topping vanilla bean ice cream,  waffles, or pancakes.  Or just eat it over the sink by the spoonfuls ( come on, I know you will do it!).

 

Warm Apple Topping

4 apples cored and chopped

1/3 cup brown sugar

1 tsp cornstarch

1/2 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp lemon juice

1/2 tsp vanilla

1 Tbls butter

Stir sugar and cornstarch in medium skillet, add apples, cinnamon, nutmeg, lemon juice, and vanilla.  Bring to a boil over medium heat stirring constantly. Boil 1 minute, reduce heat to medium low and simmer. Stir often about 8-12 minutes until apples are tender.  Add butter and stir until melted.

I actually add a little extra cinnamon because I love cinnamon.   This topping freezes very well.  So…get those apples chopped and make lots of yummy topping, enough to last the winter months.   Plus it makes your house smell really really good while you make it.
